Slimming World crustless quiche

This colourful quiche is perfect for pack-ups. Going naked (no high-calorie, buttery pastry, that is 😉) saves stacks of Syns without sacrificing any of the taste.

A Crustless Quiche recipe is a really useful thing, trust me, soft, flavour packed, protein packed and so tasty.

It’s really great for lunch served with a big salad, for supper warm with beans and  my healthy chips maybe?

However what I personally find it most useful for breakfast

PREP TIME 5minutes
COOK TIME 30minutes
TOTAL TIME 35minutes

Ingredients 

    • oil spray
    • 6 eggs
    • 200 g fat free natural yogurt
    • 1 red onion diced
    • seasoning
    • 120 g lower fat cheddar cheesegrated *must be counted or used as your allowance
    • 6 bacon medallions All fat

Instructions

  1. Firstly, preheat your oven at 160 degrees.
  2. Now spray a frying pan with oil spray and saute the onions until softened.  Then add the bacon and continue to fry until golden and set aside.
  3. Next, in a large mixing bowl, crack in the eggs and whisk.
  4. Follow on by stirring in most of the cheese and then season.
  5. Now spray a 24cm quiche dish with oil spray and layer in the onion and bacon.
  6. Then spoon in the egg and cheese mixture and smooth over with the back of a spoon.
  7. Place in the middle of the oven for 25-30 minutes until golden and serve.
  8. This can be eaten warm or cold. If serving cold, cool, cover and chill until ready to eat.
