Sourdough Garlic Pull Apart loaf Recipe

Introducing a delectable recipe for Sourdough Discard Garlic Pull Apart Bread – an enjoyable and flavorful twist on traditional garlic bread!

For the Bread

  • 1/4 cup non-dairy milk, warmed to 110°F
  • 1 1/2 teaspoons instant yeast
  • 2 teaspoons granulated sugar
  • 1 3/4 cups + 2 tablespoons all-purpose flour
  • 200 grams (approximately 3/4 cup) unfed sourdough discard, at room temperature
  • 1 lightly beaten egg
  • 1 tablespoon chopped fresh parsley or rosemary
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 2 tablespoons unsalted butter, melted

For the Topping

  • 6 tablespoons softened unsalted butter
  • 1 teaspoon garlic powder
  • 2 tablespoons chopped fresh parsley or rosemary
  • Flaky sea salt for topping


  1. In the bowl of a stand mixer, combine warmed non-dairy milk, instant yeast, and sugar. Add flour, sourdough discard, beaten egg, chopped herbs, salt, and garlic powder. Slowly add 2 tablespoons of melted butter with the mixer on low speed. Go to medium speed and continue mixing until a shaggy dough develops.
  2. Transfer the dough to a smooth work surface and knead for 3-4 minutes until a smooth, slightly tacky dough forms. Adjust consistency with more flour or non-dairy milk if necessary.
  3. Place the dough in a large greased bowl, cover with plastic wrap, and let it rise for 60-90 minutes, or until doubled in size.
  4. While the dough rises, prepare the topping by combining softened butter, chopped herbs, and garlic powder in a small bowl. Mix well and set aside. Grease a 9×5-inch loaf pan.
  5. After the rise, turn the dough onto a smooth surface and divide into 12 equal pieces. Flatten each piece into a 4-inch rough circle, spread generously with the butter mixture, fold in half, and place in the prepared pan with the fold-side down.
  6. Cover the pan with plastic wrap and let the dough rise for 30-45 minutes until it’s puffed, not rising above the pan edges.
  7. Preheat the oven to 375°F.
  8. Brush the loaf with the remaining butter mixture, sprinkle with flaky sea salt, and bake for 20-25 minutes until golden. After 10 minutes of cooling in the pan, move the food to a cooling rack to finish cooling. Enjoy and warm up!
